PS3 or 360?
I got frustrated with the controls as well. I've got the hang of it now, but the learning curve is ridiculous and they really didn't take very good advantage of the degree of control with the PS3 analog sticks.
Another frustrating thing is that it'll throw a second consecutive move sometimes, a good second after you input the move. The punches should only be 1:1, none of this "oh, I haven't finished my first move so i'll save that command and execute it afterwards, leaving me open to get knocked out".
And like I said before, based on my experience in the demo, it's way too easy to cheese with haymakers... Not tactical enough. What's the point of dodging and weaving, and using counter punches when you can just go in, throw 50 haymakers, wearing out their blocks and eventually knocking 'em out
My guess is that it wouldn't work as well against a human opponent, but what about when you're playing against CPU?
